Is your child obsessed with all things Nemo right now? With the new Finding Dory movie coming out, and all of the stores advertising with all things fish, you could say we are in Nemo heaven at our house. We plan on taking Ryder to see the new movie after it hits theaters, but until then we have been watching Finding Nemo on repeat and his toys box is quickly looking more like an under the sea world. We've also been going to farmer's market downtown every weekend and coming back with more produce than we can eat. I've been working hard to use all of the produce in freezer meals, muffins, treats, and now popsicles. I am always looking for ways to add veggies into our diets. I try hard not to sneak all of them in because I want Ryder to learn what each vegetable looks like and what they taste like. he does a good job trying (and refusing) veggies during meals.
He was a little hesitant about trying these popsicles that we made. They don't have the same smooth texture that store-bought popsicles have. They have a bit of a pulp to them which you could easily remove by using a food processor, but I wanted to make them quickly in our large blender pitcher. I made the comment that they were orange just like Nemo and that did the trick! He ate it so fast that I don't think he even breathed.
Nemo Orange Popsicle
"Nemo-sicles" -according to Ryder
3 medium carrots (cut into chunks, steamed, & cooled)
1 large mango (cut into chunks)
1 cup strawberries (tops removed)
1/2 cup plain yogurt
1/2 cup water
4 tablespoons raw honey
Combine all ingredients into a blender and blend until smooth. Pour into molds and let freeze for at least 4 hours.

Ryder helped using a children's knife from IKEA. These are the best utensils for young children! We've always taught him about how to handle sharp utensils and practiced cutting play-doh. This was the first time I let him help me cut food though. He was so excited and he did really well! (Picture from when we were making strawberry coffee cake muffins before the popsicles.)
