Apple Cider Donuts

Happy Halloween Eve! We are up to our ears in Halloween activities and festivities today. We will be making spooky art and treats after Ryder's nap. Yesterday I started making a lot of goodies for our house. We are trying to eat less of the processed, sugary junk foods which means that I am baking a lot more often these days. I researched a few different recipes and even looked at this recipe from last year, but I want to make a different type of donut. I found the perfect mix of recipes and I knew I had to share it with you. These donuts are seriously melt-in-your-mouth good and they are nearly gone already!


Apple Cider Donuts

1 cup apple cider
2 cups flour
3/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg, room temperature
2 tablespoons unsalted butter, melted
1/2 cup brown sugar
1/2 cup sugar
1/2 cup buttermilk, room temperature
1 teaspoon vanilla

Simmer apple cider over medium-low heat for 15-20 minutes to help reduce for a stronger flavor.
Place 1/2 cup of reduced apple cider in freezer to cool while getting the other ingredients together.
Add the flour, baking powder, baking soda, cinnamon, salt, brown sugar, and sugar together in a large bowl.
In a separate bowl, combine apple cider, egg, butter, buttermilk, and vanilla. Add wet ingredients to dry ingredients and mix gently. Mix only until just combined. DO NOT OVER-MIX!
Pour the batter into a large Ziplock bag and snip a small corner.
Squeeze batter into greased donut pans, leave a small amount of space from top so that you don't lose the hole in your donuts.
Bake at 350 degrees for 15-20 minutes.
Allow to cool completely then dip into melted butter and into a cinnamon and sugar mix.
Store donuts in an airtight container for up to 3 days for freshness.
